One of my favorite things about being a mom is finding little ways to celebrate each day. When a holiday approaches, my wheels start turning thinking of what I can do for and with the kids to celebrate. Not only does it add a little extra joy to our everyday, we’re making memories and starting traditions I hope they’ll always remember.
Last weekend, we put up all of the Easter decorations in our house. To celebrate the start of the Easter season, I thought it would be fun to have a bunny breakfast for the littles. My goal with the breakfast was to keep it simple and easy. On the weekend, the kids favorite breakfast is pancakes. They’d eat pancakes everyday if they could. So, for the bunny breakfast, I decided on bunny pancakes for the littles using Bob’s Red Mill flour.
This was L’s corner of the table. He doesn’t sit at the table much, so he started here and finished in his highchair. I had a juice box, fresh fruit, festive napkins, plates and even his own place setting.
For L, I decided on basic pancakes in the shape of an egg and bunny using Bob’s Red Mill Unbleached White All-Purpose Flour. It’s freshly milled from Organic hard red wheat. Both the bran and the germ have been removed leaving the endosperm that is made into white flour. It is not enriched with any additives. This flour is perfect for all of your baking needs, from breads to pancakes to muffins and more!
Here is how you can make your own pancakes using Bob’s Red Mill Unbleached White All Purpose Flour:
Ingredients:
1 1/3 cup Bob’s Red Mill Unbleached White All Purpose Flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2 tbsp vegetable oil
1 egg
1 egg white
1 tsp vanilla
1/2 tbs honey
2 tbsp oil
3/4 cup milk
*cookie cutters to create different shapes along with a squeeze bottle for the batter*
Directions:
1. Heat a griddle to 350 degrees.
2. In a large bowl, combine dry ingredients (All Purpose White Unbleached Flour, baking soda, baking powder, cinnamon and salt.)
3. In a separate bowl, combine eggs, honey, vanilla, oil and milk.
4. Mix dry ingredients with wet ingredients.
5. Pour batter into a squeeze bottle. This is what makes creating shapes easy! If you don’t have a squeeze bottle, you can also use a measuring cup with a spout, making it easy for pouring.
6. Make sure griddle is sprayed with oil before pouring batter on.
7. To create the shapes, place the cookie cutter on the griddle. Using the squeeze bottle, pour the batter so that it covers the bottom of the cookie cutter. Leave the cookie cutter on the griddle for another 10 seconds. Once the batter is starting to set, remove the cookie cutter.
8. Flip the pancakes when they begin to puff and the edges become slightly brown. About 3 minutes on each side.
9. When they’re done on each side, let cool and then serve!
Here is AG’s place setting. She was obsessed with the bunny juice boxes and I made her a little bunny hat to wear during the breakfast. I also created bright table tents to use as place settings. You can download your free table tents here.
I decided on a more creative bunny pancake for her. I used the remaining batter from the recipe above. It was so much fun to make. Using the same squirt bottle from above, I drew the head, ears, body and feet. I used strawberries for the inner ear and nose, chocolate chips for the eyes and feet, mini oreos for the feet, carrot sticks for the whiskers and mini chocolate chips for the mouth.

This was officially the first annual bunny breakfast. This will now be a tradition each year to kick off the Easter holiday celebrations. Now bring on the egg hunts!
