I can’t tell you how many times I’ve pulled meat out of the freezer with high hopes of coming up with a recipe before dinner. Unfortunately, most nights I end up staring at said meat around 5:00pm, just a half hour before dinner. By this time I don’t have time for a fancy recipe with lots of ingredients to prepare or a lengthy cooking time.
Please tell me I’m not the only one this happens to.
Anyhow, this recipe for basil pork chops is perfect for those nights. This pork took about 5 minutes to prepare and less than 20 to cook. You can put pretty much any side dish with it, most of the time we have it with rice because it’s the quickest to make. If I do have a little extra time, I love making mashed potatoes from scratch. Nonetheless, this quick and easy dinner will be a hit in your house. Enjoy!
- 1/4 cup brown sugar packed
- 1 1/2 tsp dried basil
- 1/2 tsp salt
- 1/2 tsp chili powder
- 2 tbs vegetable oil divided
- 4 small pork chops boneless, about 1/2 inch thick
- 1 tbs fresh basil leaves chopped & optional
- Combine the brown sugar, basil, salt and chili powder in a small bowl.
- Stir in 1 tablespoon oil until mixture is crumbly.
- Rub over both sides of pork chops, making sure they're completely covered.
- Cook pork in remaining oil over medium heat for 7-8 minutes on each side in a large skillet or grill pan. Juices should run clear when it's finished.
