Today, I’m sharing my most popular recipe from Simply Made with Love with you, crock pot potato soup. This recipe was one I created just over a year ago. The winter in Texas last year was very cold, especially for this Florida girl. I was looking for cozy meals that didn’t take a lot of effort. This soup turned out better than I could have ever expected. To date, it has almost 2 MILLION views over on SMWL. Add it to your menu, it will not disappoint!
If you’re in need of a new crock pot, my winter BFF…here are some amazing choices.
- 1 32 oz bag Frozen Hash Browns Cubed
- 1 32 oz box chicken broth low sodium can be used
- 1 can (10oz) cream of chicken soup do not add water
- 1 8oz package cream cheese not fat free
- 3 oz bacon bits
- 1 cup shredded cheddar cheese
- 1-2 pinches salt and pepper to taste
- Directions: Put the hash browns in the crockpot.
- Add in the chicken broth, cream of chicken soup and half of the bacon bits.
- Add a pinch of salt and pepper.
- Cook on low for 7-8 hours or until potatoes are tender.
- An hour before serving, cut the cream cheese into very small cubes. Place the cubes in the crock pot.
- Mix a few times throughout the hour before serving. You may have to put some muscle in to get it completely mixed in. Once the cream cheese is completely mixed in, it's ready to serve.
- Top with cheddar cheese and some additional bacon bits. Enjoy!

Are the hash browns the shredded kind, I’m a little confused because it says cubed?
Hi! They are not shredded, they may say diced on the package.
Can I use just regular potatoes cubed and if so how much would you say?
Absolutely, the smaller they are the faster they’ll cook. Try to dice them as small as the frozen ones. I’d do the same amount in the frozen bag, about 3 3/4 cups.
Would the regular hash browns in the bag work?? I didn’t read it said cubed & bought just regular streddered… Hope so mines already cooking..

I made this, but just on the stove, not in the crocky. I just cooked the hash browns first. Then let it simmer a while. So good. Thanks.

I’ve been making Leah ‘ s potatoe soup for about a year now. I also normally put it on the stove if I need it w/in the hour. I did make a little substitution, I use onion powder instead of onion bc of 1 picky child that that could spot an onion from a mile away. I also double the batch & I only use 1/2 of the block of cream cheese. (it’s good with the whole block but it very very rich)

I made this and it’s very runny… not sure if using an entire box of broth is my issue or what.

Can you cook the potatoes a day ahead and then reheat and add cream cheese. I need this for a noon party and don’t want to get up at 3:00 am to start thr soup
What happens if I cook it 1/2 the time on high? Does it ruin the soup?
I always cook it on high for a cpl hours so it doesn’t take as long after work. Still comes out perfect. I also add the bacon at the beginning for that extra flavor
We cooked this yesterday & my wife actually added a bag (32 oz) & a half of cubed potatoes instead of 1.. It came out really thick,how do I thin it out to get it to how it is normally with what’s remaining??.. Add more chicken broth??.
Made this once and it turned out so good. Looking to make it again but for someone who doesn’t eat pork. Was planning on just cooking Turkey bacon and throwing those pieces in instead. Unless anyone else has recommendations. Thanks in advance!
I absolutely love this soup. I have made it a handful of times and always get rave reviews from family. This last time I made it I doubled it, but felt maybe the potatoes could have cooked a little longer. Should I have adjusted the cooking time to be a little longer?
