My last year teaching, I made ice cream cone cupcakes for my students for our end of the year party. I had so much fun making them and the kids absolutely loved them. I made them again a few years ago for AG’s 2nd birthday party. I was reminded again of how much the kids loved them and even more, how much fun they were to eat. I made a mental note for them to be a summer and end of the year tradition in our family.
Friday is the last day of school for AG. I can’t believe next year she’ll be in Pre-K! I wanted to make these for AG’s end of the year picnic but there are food allergies in her class, so we can only bring in popsicles for snacks. Thankfully we have some memorial day festivities this weekend to attend. One party will have lots of littles, so I’ll be bringing them there instead. When I was at Target last week, I spotted red, white and blue funfetti cake mix which will be perfect for this recipe.
These cupcakes really are such a hit at parties. While they are a touch more involved than the typical cupcake, they’re worth it!
Do you have any events coming up that these would be perfect for?
- 1 box funfetti cake mix
- all ingredients cake mix calls for (eggs, oil, water)
- 24 ice cream cones make sure they have flat bottoms
- Preheat oven to 350.
- Cover a cupcake pan with a sheet of aluminum foil, make sure it's secured on all sides.
- Poke a slit with a knife in the center of each cupcake portion of the tin. This will be used to hold the cones up while baking. Place the ice cream cone in the center of each cupcake area. Make sure the cone is standing up in the pan.
- Prepare cake mix according to the directions on the box.
- Fill cone 1/2 full with batter.
- Bake for 20 minutes or until toothpick inserted comes out clean.
- Let them cool completely before frosting.
- I've always used store bought frosting and the Pampered Chef Easy Accent Decorator for icing cupcakes.
- Top with sprinkles and enjoy!
My mom made these for my 1st grade birthday treats and I still remember loving them like it was yesterday!
