The warmer months are quickly approaching. This week it will be in the 80’s here in Florida. This time of year, I find that my crock pot gets put aside and fresh ingredients take over our meals. Today, I’m sharing one of my favorite spring recipes with you, strawberry bread.
I first made this recipe years ago. It was an instant hit in our house. The first loaf was gone the first night. Thankfully, this recipe makes two!
As soon as the strawberries are in season, I stock up and make this bread. Usually one for us and one to share with a neighbor.
- 3 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp cinnamon
- 4 eggs beaten
- 1 1/4 cup vegetable oil
- 2 cups sugar
- 2 tbs brown sugar
- 2 cups fresh strawberries chopped
- 1 cup walnuts chopped
- Preheat oven to 350 & grease two loaf pans.
- In large bowl, combine flour, salt, baking soda, sugar and cinnamon.
- Add eggs and oil, mix well.
- Fold in strawberries and walnuts, until they're evenly distributed.
- Divide batter into the two loaf pans. Sprinkle 1 tbs brown sugar on top of each loaf.
- Bake for 1 hour or until a toothpick inserted in center comes our clean.
