Today is supposed to be the coldest day of the year. AG and I aren’t planning on leaving the house. Actually, I don’t plan on changing out of my pajamas. Tonight, I’ve decided to make one of my favorite cold weather meals. I’ll have to adapt it a bit to make it dairy free, but I’m sure it will still be delish. Enjoy!
Ingredients
1 (15 ounce) can whole kernel corn, drained
1 (14.5 ounce) can chicken broth
2 cups of shredded chicken
1 (15 ounce) can black beans
1 (10 ounce) can diced tomatoes with green chile peppers, drained
2 cans of cream of chicken soup
Directions:
I used rotisserie chicken that was already cooked. I threw everything in the crock pot and cooked it for 4-6 hours, stirring a few times along the way.
