Ever since AG started school, I’ve been struggling to eat healthy lunches. L eats around noon and we have to leave shortly after to pick up AG from school. By the time he’s fed, I have about 10 minutes to feed myself before loading him in the car to go get her. While I could easily grab a snack or something that isn’t good for me, that isn’t going to help me get off the last of this baby weight. So, when I had a chance to try Eat Smart’s new salads made with plant-based protein, I jumped at it. The new chef inspired salads are full of six or more superfoods, everything you need for a well balanced meal.
I’ll be the first to admit that I don’t eat enough salad. While I enjoy a good salad, I struggle to make one at home that goes beyond the basic greens with a few veggies. I like crunch in my salads and a variety of flavor. Which is exactly what the Eat Smart Wild Greens & Quinoa Superfood Salad provided for me. The salad is packed full of superfood veggies, crispy quinoa, almonds, feta cheese and a tasty avocado ranch dressing. Honestly, it was probably the healthiest lunch I’ve had in months. Since I only ate half the first day, I added grilled chicken the second day and it was even better!
This salad was one of the easiest lunches I’ve made. Everything is prepackaged, all you have to do is open the salad container, the individually wrapped protein ingredients and mix them all together. Two minutes was all it took to make. Best part of this lunch was how filling it was. The salad is loaded with protein, veggies and I didn’t expect for a salad to hold me over for as long as it did. There you have it, convenient, tasty and healthy. Everything a busy mom on the go needs in a lunch!

I constantly struggle with making myself a healthy lunch. Sometimes after getting the kids lunch I just don’t feel up to making one for myself. I will have to check out these salad kits. They sound perfect.
