Summer is here and I can’t tell you how much fun it’s been so far. The kids are at great ages right now. We’re out exploring each day and able to come home in the afternoon for lots of playing together. It’s been wonderful and I’m grateful for my time home with them.
Each summer, we make summer bucket lists- which I’ll share soon. One of the things on the bucket list was making popsicles. When we wrote it on there, I realized I never shared the popsicles we made last summer!
Last summer, the kids LOVED making homemade popsicles. During Amazon Prime day last year, I ordered these Zoku popsicle molds. They’re great quality and make popsicle making a breeze.
We’ve tried a bunch of different recipes for popsicles over the last year. Most of them have been pretty good. I wouldn’t say great, even though the kids still ate them. But these popsicles were some of the best we’ve made. Both kids had them multiple times, along with myself. They’re also pretty healthy too.

Ingredients:
1/2 cup Coconut Milk (not canned)
1/2 cup Watermelon
3 tbs Honey
1/2 cup Strawberries
Directions:
Wash strawberries and cut off the stems. Cut them in half or quarters. Make sure all seeds are out of the watermelon. Measure ingredients and put them into a blender. I used the Magic Bullet. Blend all ingredients together. Pour into popsicle molds and place in freezer until completely frozen.
