
Cranberry Almond Coconut Energy Balls
One of my goals this year has been to eat healthier. I spent a good part of last year getting back on track, making a lot of changes with the things I ate, changed the way I worked out and the things I focused on.
When it comes to food, I’ve had a major sweet tooth for as long as I can remember. There are times (more than I’d like to admit) where I’d just skip meals in order to have dessert. And one of the hardest things about making all the changes last year was curbing the sweets. I spent a lot of time looking for healthier things to eat that would satisfy my sweet tooth at the same time. One of my favorites things that I found to do that are energy balls. They’re so easy to make, so tasty, healthy and filling.
There are so many different recipes you can find when it comes to energy bites. I’ve tried a lot over the years. My favorites usually involve chocolate chips, but I try not to make those that much. I usually make a batch every other week and bag them up for the week ahead. Two to three in a bag. Perfect for an afternoon snack or treat before bed.
Here is what you’ll need to make the cranberry almond coconut energy balls.

When I made them this time, I had a little helper with me. L loves to help bake and make. He pulls up his stool, wanting to do everything by himself. Thankfully, this recipe is easy enough for him to do almost all on his own.


Basically, you put all of the ingredients in a large bowl and mix. I do all of the dry ingredients first. Then, I add the rest. I’ve found the best way to mix the ingredients is with your hands. It’s messy but works the most effectively. Once everything is completely mixed, use a cookie scoop to make them into balls. I put them in the fridge for about an hour before bagging them up for the week ahead.
