  1. Pre-heat an outdoor or indoor grill to medium-high heat
  2. Season the chicken cutlets with salt and pepper.
  3. Drizzle with EVOO and 1/2 of balsamic vinegar, and place on grill.
  4. Cook for 2-3 minutes each side, until the chicken is cooked through.
  5. Take off the grill and place on separate plates.
  6. Top with tomato and mozzarella slices.
  7. Drizzle with remaining balsamic vinegar.
  8. Season with salt and pepper to taste, garnish with basil.
