Summer is the time for light & easy meals with lots of fresh ingredients. Our fridge is always stocked full of veggies throughout the summer and as a busy mom, I’m all about easy ways to make them for dinner. I love chicken apple sausage, it’s always something that you can always find in our fridge. We usually have the Aidells brand but I’m also a huge fan of Trader Joe’s chicken sausage. They have tons of different flavors and I want to say they’re well under $5 for a pack. TJ’s is about 40 minutes away for me, so I always stock up when I go.
A while back, I shared this chicken apple sausage recipe. While it’s still a favorite and made often, the littles don’t love peppers. The chicken apple sausage veggie skillet I’m sharing with you today, has sweet potatoes, squash and zucchini. I usually serve it over a bed of quinoa, which surprisingly both of my littles will eat. I’ve also added in mushrooms, which is a personal favorite.
You can really go any way with this recipe. Best of all it can be made in under 30 minutes and it’s a clean eating meal. Enjoy!
- 1 package chicken apple sausage sliced
- 1-2 squash cut into halves or quartered
- 1-2 zucchini cut into halves or quartered
- 2 sweet potatoes cut into halves or quartered
- 1-2 tbs coconut oil
- salt and pepper to taste
- In a large skillet pour 2 tsp of the coconut oil and start sautéing the sweet potatoes over medium high heat. I put these in first because they take the longest to cook.
- In a separate skillet, sauté' the chicken apple sausage until cooked through. You can use a tsp of coconut oil for cooking.
- When the sweet potatoes start to soften, add the zucchini and squash, along with a little more coconut oil. Saute' until cooked through.
- Once all veggies are cooked through, add in chicken sausage to the large skillet.
- Mix everything together in the large skillet over low heat and season it with salt and pepper.
- Serve over a bed of quinoa or brown rice.
I make something extremely similar. It is one of our favorite recipes. It’s so easy, but most of all yummy! 🙂
