Chicken Apple Veggie Skillet
Clean eating was never this easy!
  1. In a large skillet pour 2 tsp of the coconut oil and start sautéing the sweet potatoes over medium high heat. I put these in first because they take the longest to cook.
  2. In a separate skillet, sauté’ the chicken apple sausage until cooked through. You can use a tsp of coconut oil for cooking.
  3. When the sweet potatoes start to soften, add the zucchini and squash, along with a little more coconut oil. Saute’ until cooked through.
  4. Once all veggies are cooked through, add in chicken sausage to the large skillet.
  5. Mix everything together in the large skillet over low heat and season it with salt and pepper.
  6. Serve over a bed of quinoa or brown rice.
