There something about pumpkin bread, hot coffee and the cool fall breeze that fits perfectly together. For me, it’s one of the things I look forward to most over the fall months. It can be the perfect breakfast, or in my case a mid morning or afternoon snack. You just can’t go wrong with a freshly baked pumpkin bread. Today, I’m sharing one of my favorite recipes with you.

Ingredients
- 1 1/2 cups all purpose flour
- 2 eggs
- 1 cup sugar
- 1 cup pumpkin puree
- 3/4 cup vegetable oil coconut oil will also work!
- 3/4 cup chocolate chips semi sweet or milk chocolate
- 1/2 tsp baking soda
- 2 tsp cinnamon
- 1 tsp pumpkin pie spice
Servings: loaf
Instructions
- 1. Preheat oven to 350.
- 2. In a large bowl, combine the flour, salt, baking side, cinnamon and pumpkin pie spice. Set aside.
- 3. In another bowl, mix the eggs, sugar, pumpkin puree and vegetable oil.
- 4. Add dry mixture to the wet mixture about a cup at a time and continue to mix.
- 5. Once batter is formed, fold in chocolate chips.
- 6. Pour into a greased loaf pan (mine was 8x4.)
- 7. Bake for 1 hour or until cooked through.
- 8. Cool for 10 minutes, then transfer to a wire cooling rack to finish cooling.
