Today, I’m sharing one of our go to spring and summer meals. It’s a clean eating recipe that can me made in less than a half hour, using just two pans and a cutting board. Perfect for busy families who still want to put a healthy dinner on the table. I make this once a week and usually switch up the vegetables based on what is in the fridge. Enjoy!
Ingredients
- 1 package chicken apple sausage sliced
- 2 medium sweet potatoes cut into cubes
- 1 red pepper cut into 1 inch pieces
- 1 green pepper cut into 1 inch pieces
- 2 TBS coconut oil
- 1/4 tsp salt and pepper or more to taste
Servings: people
Instructions
- Heat oil over medium heat in a large skillet.
- Add sweet potatoes to the skillet once it's warm.
- About 5 minutes after sweet potatoes start cooking, add peppers. Sautee until all veggies are cooked through
- In a separate small skillet, cook chicken apple sausage. You can cook it in a bit of coconut oil, I used coconut oil cooking spray.
- Once chicken apple sausage is headed through and all the veggies are done, combine in the large skillet. Add a little salt and pepper.
- Serve and enjoy!
