Cornflake M&M Cookies
One of the things I look the most forward to over the holiday season is baking cookies. I host an annual cookie exchange each year, set aside a baking day for AG and I and always spend a day baking with my mom too. There is just something about being in the kitchen with the ones you love and delivering treats to friends that make the holiday season just a bit more magical.
As of today, I’ve baked over 20 dozen cookies! Most have been delivered to neighbors, friends and coworkers. Out of all the recipes I’ve tried this year, these cornflake M&M cookies have been the most asked about. They’ve also been the favorite, which is why it’s the first recipe I’m sharing with you this week. Add them to you baking list and get ready for lots of recipe requests!
- 1 cup butter softened
- 1 cup sugar
- 1 cup brown sugar packed
- 1 large egg
- 1/2 tsp vanilla extract
- 2 cups flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 cups cornflakes lightly crushed
- 2 cups mini M&M's
- In a mixer, combine the butter and sugars. Mix for 2 minutes or until creamed together.
- Add the egg along with the vanilla, mix for another 3-4 minutes.
- In a separate bowl, combine the flour, baking soda, baking powder and salt. Once mixed, gradually add the dry flour mixture into the sugar mixture, mixing as you go, until dough is formed.
- After dough is formed, mix in cornflakes and mini M&M's with a spoon or on low using the mixer.
- Refrigerate dough for 30 minutes to 1 hour.
- Preheat oven to 350 degrees.
- One dough is cool, place balls of dough on a parchment lined cookie sheet. I used a medium cookie scoop for my cookies. Make sure dough is placed at least 2 inches apart, as the cookies will spread.
- Bake for 10-12 minutes or until the edges are lightly browned.
- Once removed from the oven, let them sit for 2-3 minutes before moving them to cooling racks.
- Once completely cool, store in an airtight container.
