  1. In a mixer, combine the butter and sugars. Mix for 2 minutes or until creamed together.
  2. Add the egg along with the vanilla, mix for another 3-4 minutes.
  3. In a separate bowl, combine the flour, baking soda, baking powder and salt. Once mixed, gradually add the dry flour mixture into the sugar mixture, mixing as you go, until dough is formed.
  4. After dough is formed, mix in cornflakes and mini M&M’s with a spoon or on low using the mixer.
  5. Refrigerate dough for 30 minutes to 1 hour.
  6. Preheat oven to 350 degrees.
  7. One dough is cool, place balls of dough on a parchment lined cookie sheet. I used a medium cookie scoop for my cookies. Make sure dough is placed at least 2 inches apart, as the cookies will spread.
  8. Bake for 10-12 minutes or until the edges are lightly browned.
  9. Once removed from the oven, let them sit for 2-3 minutes before moving them to cooling racks.
  10. Once completely cool, store in an airtight container.
