Cornflake Sweet Potato Casserole
Cornflakes, marshmallows, pecans, OH MY! A family favorite for years.
  1. Filling Instructions:
  2. Preheat oven to 400°.
  3. Bake sweet potatoes on a foil lined baking sheet for 1 hour or until tender.
  4. Remove potatoes from over & reduce oven temperature to 350°.
  5. Let potatoes stand until cool to touch (about 20 minutes). Peel and mash once cool.
  6. Mix softened butter, brown sugar, salt, milk, vanilla and egg into the mashed sweet potatoes with a mixer. Mix until smooth.
  7. Spoon mixture into an 11- x 7-inch baking dish coated with cooking spray.
  8. Prepare Topping
  9. Stir together crushed cornflakes, brown sugar, pecans and melted butter.
  10. Sprinkle over sweet potato mixture in rows 2 inches apart.
  11. Bake at 350° for 30 minutes. Remove from oven; let stand 10 minutes.
  12. Then sprinkle miniature marshmallows in alternate rows between cornflake mixture, and bake for 10 more minutes or until marshmallows start to brown.
  13. Once removed from oven let stand for a few minutes before serving.
