Whenever we have a party to go to, I like to try new recipes. Last month, we had an end of the season baseball party and I volunteered to bring dessert. The day of the party was pretty busy, we had a baseball game in the morning with the party in the afternoon. I had about 3 hours in between to go to the store, make the dessert, get the kids ready and all that jazz. I wanted a quick and easy dessert but one that didn’t taste like it came from a box. So I decided to use boxed brownie mix and oreos to make easy oreo brownies.
Making the Brownies
I bought regular oreos, but next time I’ll use double stuffed for more of the filling. For these brownies you can use a 9×13 brownie pan for thinner brownies or 8×8 for thick brownies. I used a 9×13 and I was able to get two fill brownie layers along with the oreos. It was the perfect amount of batter but if you used double stuffed oreos, I would use an 8×8.
First, preheat the oven. Prepare the brownie mix according to the directions on the box and try to keep your kiddos from stealing the oreos!
Once the brownie mix is prepared, split it into two bowls, half of the mix in each bowl. You can skip this step to wing it, but I didn’t want to be short mix for the top layer. Spray your brownie pan and pour one of the bowls into the pan. Gently spread the mix to cover the entire bottom of the pan.
The next layer will be the oreos. Place them in rows, next to each other to fill the pan.
After that, pour the remaining brownie batter in rows over the oreos. Pour slowly and go up and down the pan to make sure the oreos are covered.
Finally, you can crush some remaining oreos to put on top or bake as is. Bake for the amount of time the box calls for.
Once they’re finished and a toothpick comes out clean, let cool before cutting.
I cut them in half for the party since I knew there would be lots of sweets and smaller pieces would be better for the kids.
These easy oreo brownies were a hit at the party. I’m glad we left a few at home to enjoy the next day!
- 1 box brownie mix with ingredients the box calls for.
- 24 regular oreos plus more if you'd like to crush some on top
- Preheat the oven. Coat a brownie pan with cooking spray.
- Prepare brownie mix according to directions on the pan.
- Split the prepared brownie mix into two bowls.
- Pour one bowl into the pan, spreading evenly to cover the bottom of the pan.
- Place the 24 oreos on top of the first layer of brownie mix.
- Pour the remaining bowl of batter on top of the oreos. Do this in rows to make sure the mix covers all of the oreos.
- Bake according to the time on the box.
- Once a toothpick comes out clean, let the brownies cool.
- Once cooled, cut and serve! Enjoy!
