  1. Preheat the oven to 350 degrees. Coat a muffin pan with cooking spray.
  2. In each muffin tin, place a spoonful of chopped spinach, bacon, tomatoes and peppers.
  3. Fill each muffin tin up with egg whites, about 3/4 of the way, covering the veggies.
  4. Sprinkle with salt and pepper.
  5. Bake for 18-20 minutes or until the eggs are completely set.
  6. Let them sit for 5 minutes when coming out of the oven.
  7. Move to a wire rack to finish cooling. Place in a container once completely cooled.
