Last week, we tested out a new recipe for Lucky Charms Cookies. It wasn’t something we had made before. It was either going to be a success or a fail…

At the beginning of the month, I made a list of all of the things that we we’re going to create over in March. Some things are planned for my baking classes. Some things for the kids- just for fun and others for the blog to go along with new printables that are coming your way. Everything was piled up at the end of the counter waiting to be sorted…and stayed there for a few days.
When AG came home from school one day, said she wanted to make cookies. I immediately looked at the pile on the counter, wondering if anything could be used to create a different kind of cookie. One we hadn’t made before. I asked her if she wanted to see if Lucky Charms cereal would be any good in cookies and she was all for it.
For this recipe, I used my go to cookie dough. I use the same cookie dough for about 80% of my cookies, just changing the mix ins and sometimes the extract flavors.
One of my most popular cookie posts are my fruity pebble cookies. These Lucky Charms cookies definitely aren’t as flavorful as those fruity pebbles cookies but I loved the crunch they have mixed with the sweetness of the marshmallows. Everyone at home was a fan and we delivered them as our Friday treat to coworkers and teachers, who enjoyed them as well.
As of right now, just a few days later…there is only one left on the counter. That’s my way of judging the success of a new recipe!

Now, I’m thinking about what other cereals we can add to into cookie dough!

- 3 cups flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 sticks butter 1 cup
- 2 large eggs
- 2 tsp vanilla
- 1 cup sugar
- 1 cup brown sugar
- 2 cups Lucky Charms
- Preheat oven to 350, line a cookie sheet with parchment paper
- Cream the butter, then mix in the white and brown sugar
- Next, add the eggs. One at a time.
- Once eggs are mixed in, add the vanilla.
- In a separate bowl, combine the flour, salt and baking soda.
- Add the dry ingredients into the wet ingredients about 1/2 cup at a time.
- Once you have the dough formed, add in the lucky charms. Mix gently with a wooden spoon. Once they're evenly mixed in, start scooping the dough (medium size balls) onto the cookie sheet.
- Bake for about 10 minutes or until edges start to brown.
