Monster energy bites had been on my list to make for the last few weeks. For about 5 days in a row, I added them to my daily to do. But, by the time I got home from work, other things came up or I was just too tired. Last weekend, I finally got around to making them.
And four days later….they’re gone and back on my to do list to make again.
What I love about making energy bites is that they’re easy to make, packed with (mostly) good ingredients and they satisfy a sweet tooth. These little bites save me at night. Instead of searching for cookies, ice cream or chocolate, one or two of these will do the trick.
Over the last few years, I’ve made a variety of energy bites. I’ve shared my cranberry almond bites on the blog. Those are a personal favorite of mine. But, the kids aren’t huge fans. So I decided to get some mini M&M’s at the store last week to add to bites that they would hopefully like.
The monster energy bites take only about 15 minutes to make. Combine all of the ingredients (except the M&M’s) into a mixing bowl. Now, if you have an electric mixer with a paddle attachment, I would suggest to use that. In the past, I had used my hands and various spoons to mix the ingredients. By the time I was done, I almost broke a sweat and my hands smelled like PB for hours.
Using a mixer is a game changer when it comes to the energy bites and makes them easier to form into balls as well. Mix the ingredients on low until everything in combined.

Last weekend was a busy one for us. Between all the kids, there were 6 baseball games over two days, plus a baking class and birthday party. The temps were in the 80’s and it was HOT. I packed these in our cooler and we all enjoyed these throughout the weekend. We needed any extra energy we could get!

- 2 cups rolled oats instant
- 1 cup peanut butter
- 3/4 cup honey
- 1/2 cup mini chocolate chips
- 3/4 cup mini M&M's
- 1 tsp chia seeds
- 1/2 cup flaxseed meal
- Combine all ingredients (except m&m's) into a large mixing bowl.
- Mix until all ingredients are combined.
- Add mini m&m's to bowl and mix in.
- Using a cookie scoop, form dough into balls. Place on parchment paper a parchment paper lined cookie sheet.
- Once all balls are formed, put into the fridge to chill for 1-2 hours.
