Believe it or not, this is a clean eating recipe. You wouldn’t be able to tell from the taste. Sometimes healthy can also be flavorless. Not the case with this recipe. The pecans combined with the panko crumbs create the perfect crunch for the chicken. The small amount of seasoning goes a long way. Best part is this recipe only takes about 20 minutes, start to finish. It’s a family favorite in our house, my picky toddler even devoured it. Enjoy!
- 3/4 cup pecan pieces use a food processor to get them fine
- 1/2 cup whole wheat breadcrumbs
- 1/4 tsp cayenne pepper
- 1 1/2 lbs chicken breasts boneless, skinless, cut in half
- 3/4 tsp salt
- 2 large eggs
- 3 tbs olive oil
- 1. Combine pecans, Panko crumbs and pepper in a bow. *Use a bowl that will allow you to dip the chicken in to coat*
- 2. Sprinkle chicken with salt
- 3. Beat egg whites until foamy.
- 4. Dip chicken in egg whites then cover with pecan mixture.
- 5. Heat half of the oil in a nonstick skillet over medium heat. Cook 3 chicken breasts for 2-3 minutes per side or until done. Repeat with remaining oil and chicken.
