The weather here in FL dipped down for the first time in a while this week. As soon as I hear cold front, I think about what kind of comfort meal I’m going to make. I’ve made this Sausage, Kale and White Bean Soup a few times and it’s just perfect for those chilly nights. It’s filling, full of flavor and pretty healthy- which is great if you’re working on a healthy start to the new year. I make this soup in the slow cooker because if there is any option of not having to spend a lot of hands on time cooking, I’ll take it. But, this can also be made on the stove. Whatever works for you.
