The weather here in FL dipped down for the first time in a while this week. As soon as I hear cold front, I think about what kind of comfort meal I’m going to make. I’ve made this Sausage, Kale and White Bean Soup a few times and it’s just perfect for those chilly nights. It’s filling, full of flavor and pretty healthy- which is great if you’re working on a healthy start to the new year. If you’re looking for something easy to add to the dinner rotation this winter, this soup is it!
I make this soup in the slow cooker because if there is any option of not having to spend a lot of hands on time cooking, I’ll take it. But, this can also be made on the stove. Whatever works for you.
Here is the line up of ingredients for this Sausage, Kale and White Bean Soup. Carrots, celery, kale, diced tomatoes, Italian sausage, garlic, chicken broth, white beans, onion and seasoning.
Less than 10 ingredients needed and you’ll be surprised with how filling this meal can be. I usually make it for dinner then have it the next few days for lunch. It heats up well and tastes just as good as the night it’s made. Enjoy!

- 1 lb italian sausage
- 1 cup celery sliced
- 1 cup carrots sliced
- 1/2 onion chopped
- 2 tsp garlic
- 1 can diced tomatoes
- 4 cups chicken broth
- 3 cups kale chopped
- 1 can white beans of your choice
- oregano to taste
- garlic powder to taste
- Cook sausage with garlic and onion. Set aside.
- In a slow cooker, add all of the ingredients.
- Season with oregano, pepper and garlic powder
- Cook on high for 4-6 hours or until veggies are tender.
- Serve and enjoy!
