Spinach Tomato Shrimp Pasta

  1. Start cooking the pasta in a large pot of boiling salted water.
  2. Allow pasta to cook. In a large skillet, heat 1 tbs olive oil in a large skillet on medium-high heat.
  3. Add the minced garlic. Sautee for about 1 minute.
  4. Add tomatoes along with the chicken broth to the garlic. Cook for about 5-7 minutes or until the tomatoes start to soften. *Check pasta and drain if it’s finished. Add 1tsp of oil to the pasta, stir and set aside.
  5. Then add the spinach to the skillet. Stir ingredients together and cook until the spinach is starting to wilt.
  6. Then add the shrimp to the skillet, cook until it’s pink. About 5-7 minutes.
  7. Season with salt, pepper and Italian seasoning. Optional red pepper flakes and parmesan cheese if you’d like.
  8. Remove skillet from heat. Add cooked (and drained) pasta to the skillet with shrimp. Stir all ingredients together until mixed and heated through.
